Ingredients: 1 lb ground beef or turkey. 1 packet taco seasoning mix. 1/2 cup diced onion. 1/2 cup diced tomatoes. 1/4 cup diced green bell pepper. 1/4 cup diced red bell pepper. 1/4 cup shredded cheddar cheese. 1/4 cup sour cream. 1/4 cup salsa. 12 mini taco shells. 1 tablespoon vegetable oil. Salt and pepper to taste. Fresh cilantro leaves for garnish optional.
Instructions: In a skillet, heat the vegetable oil over medium-high heat. Add the diced onions and peppers, saut for 2-3 minutes until they start to soften. Add the ground beef or turkey and cook until browned, breaking it apart with a spatula as it cooks. Sprinkle the taco seasoning mix over the meat and stir to combine. Add salt and pepper to taste. Reduce the heat to low and simmer for 5-7 minutes, allowing the flavors to meld together. While the meat is simmering, warm the mini taco shells in the oven according to package instructions. Once the meat mixture is ready, assemble the mini tacos: Spoon a generous portion of the meat mixture into each taco shell. Top with diced tomatoes, shredded cheddar cheese, a dollop of sour cream, and a drizzle of salsa. Garnish with fresh cilantro leaves if desired.
