The spicy mix of chili powder and cumin in the marinade for these grilled chili chicken skewers makes them very tasty. They come with a bright cilantro lime pesto that makes every bite taste fresh and zingy.
Ingredients: 1 lb chicken breast, cut into chunks. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. 1/4 cup fresh cilantro leaves. 1/4 cup fresh parsley leaves. 1/4 cup grated Parmesan cheese. 2 tablespoons lime juice. 1/4 cup pine nuts or almonds. 1/4 cup olive oil. Salt and pepper to taste.
Instructions: In a bowl, combine olive oil, minced garlic, chili powder, cumin, salt, and pepper. Add chicken chunks and toss to coat. Marinate for at least 30 minutes. Meanwhile, prepare the cilantro lime pesto. In a food processor, combine cilantro, parsley, Parmesan cheese, lime juice, pine nuts or almonds, olive oil, salt, and pepper. Blend until smooth. Preheat grill to medium-high heat. Thread marinated chicken onto skewers. Grill skewers for 6-8 minutes per side, or until chicken is cooked through and has nice grill marks. Serve grilled chili chicken skewers with cilantro lime pesto on the side for dipping. Enjoy!
