These buns are great for people on a keto diet or who have to watch what they eat because they don't have any nuts or grains. They're fluffy and light, and you can eat them on their own or as a base for sandwiches.
Ingredients: 1 cup coconut flour. 4 large eggs. 1/2 cup coconut oil, melted. 1 teaspoon baking powder. 1/2 teaspoon salt. 1/2 cup unsweetened almond milk. 1 tablespoon apple cider vinegar. 1 tablespoon sesame seeds optional, for topping.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put baking powder, salt, and coconut flour in a large bowl and mix them together. Crack the eggs into a different bowl and mix them with the almond milk, apple cider vinegar, and melted coconut oil. Add the wet ingredients to the dry ones and mix them together until everything is well mixed. Allow the dough to rest for a few minutes so that the coconut flour can soak up the water. Make 6 equal pieces of dough and shape each one into a bun. Put the buns on the baking sheet that has been prepared. If you want, you can sprinkle sesame seeds on top of the buns. Put them in the oven for 25 to 30 minutes, or until they are firm and golden brown. Let the buns cool down a bit before you serve them.
