Enjoy these cute Easter Bunny Pancakes on Easter Sunday. They will make both kids and adults happy. Not only are these colorful, fluffy pancakes tasty, but they also make a great holiday breakfast.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. Red and green food coloring. Whipped cream. Chocolate chips. Strawberries. Blueberries. Maple syrup.
Instructions: In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, combine buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Divide the batter into two bowls. Add a few drops of red food coloring to one bowl and green food coloring to the other. Mix until you achieve desired colors. Preheat a non-stick griddle or skillet over medium heat and lightly grease it with butter or cooking spray. Pour bunny-shaped pancake molds onto the griddle and cook until bubbles form on the surface, then flip and cook until golden brown on both sides. Remove the bunny pancakes from the griddle. Decorate the bunny pancakes with whipped cream for the tails, chocolate chips for the eyes and nose, and strawberries and blueberries for ears and decorations. Drizzle with maple syrup and serve warm.
