These skinny buttermilk mashed potatoes with chives are a lighter take on a classic comfort food. They are creamy and flavorful without the extra calories of traditional mashed potatoes.
Ingredients: 1 lb potatoes, peeled and quartered. 1/2 cup low-fat buttermilk. 2 tbsp chopped chives. Salt and pepper to taste.
Instructions: Boil the potatoes in a pot of salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or fork until smooth. Gradually stir in the buttermilk until the desired consistency is reached. Season with salt and pepper to taste. Fold in chopped chives until evenly distributed. Serve hot, garnished with extra chives if desired.
