Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 egg. 1 tsp vanilla extract. 1/4 tsp salt. Green food coloring. White and black icing for decoration.
Instructions: In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract to the mixture, and beat until well combined. Gradually add the flour and salt to the wet ingredients, mixing until a dough forms. Divide the dough into two portions and add green food coloring to one portion to create the cactus color. Wrap both portions of dough in plastic wrap and refrigerate for at least 30 minutes. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. Take a small amount of green dough and roll it into a small ball. Shape it into a cactus shape by elongating one end and making small indentations with a fork or toothpick. Place the cactus-shaped cookies onto the prepared baking sheet, leaving space between each cookie. Bake the cookies for 10-12 minutes or until the edges turn golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are cooled, use white and black icing to decorate the cactus cookies, adding spines and any other desired details.
