Café brûlot. È una bellissima storia quella che si cela dietro la ricetta di questo caffè flambé che risale al XVIII secolo e nasce nel nord della Francia. È nella Charente che un vignaiolo ebbe l'idea di 'scaldare' il caffè freddo avanzato con del cognac infiammando il piattino della tazza proprio per evitare che una bevanda considerata allora così preziosa andasse sprecata. Tutto nasce da un'idea di recupero, dal pensiero che da un avanzo potesse nascere qualcosa di ancora buono, anzi, gourmande. Quando mi sono imbattuta in queste meravigliose tazze dall'insolito manico a disco tanto pesanti da sembrare piccole sculture più che soltanto tazze, ho iniziato questa piccola ricerca. E cosa c'è di più bello di concedere al pensiero di distrarsi e di lasciarsi trasportare nel tempo permettendo che immaginazione, favola, storia e realtà si amalgamino in un racconto da condividere? Per chi vorrà provare questa bevanda confortante ecco la ricetta, ma per la preparazione vi rimando al sito di @lacucinaitaliana dove trovate le fasi precise per prepararlo a regola d'arte. The Pecan Pie was AMAZING. It was perfect. The cookie crust was perfect texture, and the filling was super sweet and nutty, without being too sticky or too wet. Sublime. Custard was lovely - nothing special though. Cafe Brulot is a coffee-liqueur (or maybe it was proper likker? idk - it was alcoholic) with fruit situation set on fire at your table. It was good and basically tasted like a nice sweet-n-spicy black spiked coffee. Of course Galatoire’s killed it in service and style, plus there’s an A++ for Nola tradition. But seriously that Pie was ridiculous.
Overall grade: A
