Transform leftover ham into a delicious Cajun-inspired soup with hearty navy beans and a blend of spices. This easy-to-make soup is perfect for cozy nights and packs a punch of flavor.
Ingredients: 2 cups leftover ham, diced. 1 cup dried navy beans, soaked overnight. 1 onion, chopped. 1 bell pepper, chopped. 2 celery stalks, chopped. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 6 cups chicken broth. 2 teaspoons Cajun seasoning. 1 teaspoon dried thyme. 1/2 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion, bell pepper, celery, and garlic. Saut until vegetables are softened. Stir in diced ham and cook for an additional 2-3 minutes. Add soaked navy beans, diced tomatoes, chicken broth, Cajun seasoning, dried thyme, paprika, cayenne pepper, salt, and black pepper. Bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours or until beans are tender. Adjust seasoning to taste and serve hot. Enjoy the flavorful Cajun Ham and Bean Soup!
