These quick pancakes are perfect for busy nights when you want a delicious homemade breakfast in no time. You can pre-mix the dry ingredients and store them for even quicker pancake dinners.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter.
Instructions: In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay. Preheat a griddle or non-stick skillet over medium-high heat and lightly grease it with oil or butter. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Serve hot with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
