Ingredients: 3 cups watermelon cubes, seeded. 1 cup vanilla cake crumbs. 1/2 cup cream cheese, softened. 2 cups white chocolate, melted. 1 cup green candy melts. Green food coloring. Lollipop sticks.
Instructions: In a food processor, blend watermelon cubes until smooth. Strain watermelon puree to remove excess liquid. In a large bowl, combine watermelon puree, vanilla cake crumbs, and softened cream cheese. Mix until well combined. Roll the mixture into small cake balls and place on a parchment-lined tray. Insert lollipop sticks into each cake ball and freeze for 1 hour. Melt white chocolate in a microwave-safe bowl according to package instructions. Dip each frozen cake pop into melted white chocolate, coating evenly. Allow excess chocolate to drip off.
