another thing that has to do with shapeshifting might be the person who told muffet that frisk hurt the spiders maybe? she said she almost swore she could see it change in the shadows (im not sure about the way she said it tho)

I think that would most likely be Mettaton since he does admit to hiring mercenaries to attack you. Staying in the shadows while in Mettaton EX form would make sense since he wants to make his big debut in front of an audience. 

Other people say that it could be Flowey, but after you exit the ruins he tells you his plan isn’t to kill you but watch you carefully (Personally, I would not trust a Flower to give me money or call his smile “nice”) the only person Flowey is confirmed to talking to is Papyrus.

(People also say that it might be Gaster but mystery-man sprite doesn’t even really shape-shift, he just blinks out of reality)
