You can't say no to salty oysters covered in a crispy buttermilk batter and served with a sour caper aioli for dipping. This recipe adds a tasty twist to the classic fried oyster dish.
Ingredients: 1 dozen fresh oysters, shucked. 1 cup buttermilk. 1 cup all-purpose flour. 1 teaspoon paprika. Salt and pepper to taste. Vegetable oil for frying. 1/2 cup mayonnaise. 2 tablespoons capers, chopped. 1 tablespoon lemon juice. 1 clove garlic, minced.
Instructions: Place shucked oysters in a bowl and pour buttermilk over them. Let them soak for 10-15 minutes. In a shallow dish, mix flour, paprika, salt, and pepper. Heat vegetable oil in a deep skillet or fryer to 350F 175C. Remove oysters from buttermilk and dredge in the flour mixture, shaking off excess. Fry oysters in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels. In a small bowl, mix mayonnaise, chopped capers, lemon juice, and minced garlic to make the aioli. Serve fried oysters hot with caper aioli for dipping.
