An interesting take on the traditional Italian salad, these Caprese tarts are a treat. They are a fancy appetizer or light meal because they have layers of fresh tomatoes, creamy mozzarella, and fragrant basil on top of flaky puff pastry.
Ingredients: 1 sheet puff pastry. 2 medium tomatoes, thinly sliced. 1 cup fresh mozzarella, sliced. 1/4 cup fresh basil leaves, chopped. 2 tbsp balsamic glaze. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. With a round cutter, make 4 circles out of the puff pastry. Put circles of dough on a baking sheet that has been lined with parchment paper. Put slices of tomato and mozzarella cheese on top of each circle of dough. Add pepper and salt. Place in an oven that has already been heated and bake for 15 to 20 minutes, or until the crust is golden brown and the cheese melts. Take the tarts out of the oven and sprinkle chopped basil on top of them. Add the balsamic glaze right before serving.
