With this tasty BBQ chicken marinated in a tropical sauce, you can taste the flavors of the Caribbean. It's great for a summer barbecue or any time of the year for a taste of the islands.
Ingredients: 4 chicken thighs. 1 cup pineapple juice. 1/4 cup soy sauce. 2 tablespoons brown sugar. 2 tablespoons lime juice. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 teaspoon allspice. 1/2 teaspoon thyme. 1/2 teaspoon cinnamon. Salt and pepper to taste.
Instructions: In a bowl, whisk together pineapple juice, soy sauce, brown sugar, lime juice, garlic, ginger, allspice, thyme, cinnamon, salt, and pepper to create the marinade. Place chicken thighs in a resealable plastic bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results. Preheat the grill to medium-high heat. Remove chicken from the marinade and discard the used marinade. Grill chicken thighs for 6-8 minutes per side or until fully cooked, basting with the reserved marinade during grilling. Serve the Caribbean Chicken hot, garnished with fresh slices of pineapple and a sprinkle of chopped cilantro.
