Ingredients: 2 cups grated sweet potatoes. 1 cup all-purpose flour. 1/4 cup brown sugar. 1/4 tsp salt. 1/4 tsp nutmeg. 1/4 tsp cinnamon. 1/4 cup coconut milk. 1/4 cup grated coconut optional. 1/4 cup raisins optional. Vegetable oil for frying.
Instructions: In a mixing bowl, combine the grated sweet potatoes, all-purpose flour, brown sugar, salt, nutmeg, and cinnamon. Add the coconut milk and mix until a dough forms. If the dough is too dry, add a little more coconut milk as needed. If desired, fold in the grated coconut and raisins into the dough for added flavor and texture.
