Ingredients: 1 cup puffed quinoa. 1/2 cup almonds, chopped. 1/2 cup dried cranberries, chopped. 1/2 cup unsweetened shredded coconut. 1/4 cup cocoa powder. 1/4 cup honey or maple syrup. 1/4 cup almond butter. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: In a large bowl, combine puffed quinoa, chopped almonds, chopped cranberries, shredded coconut, and cocoa powder. In a small saucepan, heat honey or maple syrup, almond butter, vanilla extract, and a pinch of salt over low heat until well combined and slightly runny. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. Press the mixture firmly into a lined baking dish, pressing down with a spatula to ensure it's tightly packed. Chill in the refrigerator for at least 2 hours, or until set. Once set, remove from the fridge and slice into bars or squares. Store in an airtight container in the refrigerator for up to a week.
