Day111: Fried Catfish with lemon dip, etc. Let me just say, I am not a catfish fan -- or any bottom-dwellers who taste like the ponds they came from (think escargot, crawfish). However, my boys think catfish is very cool - especially since it became associated with our winning hockey team. So when I happened to see it in the Publix seafood case, I decided to try cooking it. #fortheboys I cut it into tenders, put them in a ziplock with a citrus vinaigrette (from a bottle), and kept them in the fridge a couple days. Today for Sunday lunch I pulled them out, dredged each in milk and then a mix of cornmeal and Lawry's lemon pepper. I put them in a skillet with 1/4" hot olive oil for 4min each side. Then I mixed 1/2c plain Greek yogurt with juice of 1/2 lemon and chopped cilantro. Alone, the fried catfish was ok but I could still taste the pond. With the lemon "tarter sauce"/aoli, I couldn't taste the pond. This was a major victory.
