These Roasted Cauliflower Pizza Bites taste great and are better for you than regular pizza. The cauliflower crust is gluten-free and full of flavor, so it's great as an appetizer or snack.
Ingredients: 1 small cauliflower head, cut into florets. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup tomato sauce. 1 1/2 cups shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/2 teaspoon dried oregano. 1/2 teaspoon garlic powder. 1/4 teaspoon red pepper flakes optional. Fresh basil leaves for garnish.
Instructions: Turn on your oven and heat it up to 425F 220C. Sprinkle the cauliflower florets with salt and pepper and olive oil. Place them on a baking sheet. Put the cauliflower in an oven that has already been heated and roast it for 20 to 25 minutes, or until it is soft and slightly browned. Take the cauliflower out of the oven and let it cool down a bit. Pulse the roasted cauliflower in a food processor until it looks like rice grains. Put the cauliflower rice on a clean kitchen towel and squeeze out as much water as you can. Put the cauliflower rice, grated Parmesan cheese, and garlic powder in a bowl and mix them together. A baking sheet should be lined with parchment paper. Use the cauliflower mixture to make small crusts on the paper. The crusts should be baked for 15 to 20 minutes, or until they are golden and crispy. Take the crusts out of the oven and cover each one with tomato sauce. If you want, you can top the sauce with red pepper flakes, dried oregano, and mozzarella cheese. For another 10 to 15 minutes, or until the cheese melts and bubbles, remove from the oven.
