I didn't take a picture of these but they're pretty delish and way better for you then straight up mashed potatoes.
Cauliflower Mashed Potatoes (Caulipots)
3 yukon potatoes cut into 3/4" pieces
half head of cauliflower
1 broccoli crown
1/2 c chopped scallions
5 gloves garlic minced
2 tsp dried thyme
4 tbls to 1 c veggie broth (however much you want)
1/2 c coconut creamer
Earth Balance (optional)
1 tbls olive oil plus more to sauté
salt and pepper to taste
Put potatoes (in pieces) in a 4 qt pot and cover with cold water plus about 4 more inches of water for when you add the cauliflower and broc. Boil.
Once boiling, add cauliflower and broc, reduce heat to simmer and cover for 20-30 min.
When all veggies are fork tender, drain water in colander and return potatoes, cauliflower and broc to your pot. Mash them up a bit with a potato masher (if you have one, I used my old meat tenderizer covered in a plastic baggie).
Add vegetable broth, creamer, and 1 tbls olive oil. You can add some Earth Balance now if you wish. Mash everything together.
Heat up a little olive oil in a frying pan over medium heat and sauté the garlic, scallions and thyme for a few minutes (no more than 5 or 6).
Add the herbies to your mashed up business. Mix it all in there.
Eat that shit up!
Its a really good side dish but last night its all I ate cause I was too lazy to make anything else.
