why maple?

The more in character answer is that Stan still rolls his own cigarettes and uses a mixture that is soaked in maple and rum because he likes the scent so it has kinda permeated (and covers most of the death and blood scent and sort of overall tangy scent that he would permeate if he didn’t smoke up a storm). A more honest answer is that one time back when I was first gaining him as a muse I once came back to my dorm and it was filled with the smell of maple and I just started associating the scent with this character. Also I think the tan suit that Gary Oldman wears as Norman Stansfield wears (a large inspiration big surprise) also seems to have created that association.
