Certainly! My ingredients list comes from the recipe I have made up at myfitnesspal, so pardon the exactness. This makes 5 serving, at 260 calories.
14 ounce, Sweet Potato
1 lb(s), Ground Chicken
96.00 gram, Onion (about 1/4 of a medium sized sweet onion)
1 T., Butter
5 ounce, Green Apple (about 1 large apple)
Spices and seasoning to taste. the basics of salt, pepper, and garlic is a good start. I also find that a sweet or mild curry powder is good.
Peel and chop: Sweet potatoes, Onion, Apples into small, bite sized cubes Boil sweet potatoes for about 5 minutes.
In a large pan, cook chicken over medium heat, stirring until crumbly and no longer pink. Add butter and onions, cooking on the side until they soften.
Drain sweet potatoes, and add them and the apples to the pan. Stir to combine. Cook, stirring occasionally, until apples have softened and sweet potatoes have reached your desired level of crispy.
Season as you go. I do one chunk of seasoning on the chicken, and then another as I am combining everything. You may find you want more butter -- I cut it down to save on calories.
