Ingredients: 1 whole beef brisket 12-15 pounds. 1/4 cup coarse salt. 1/4 cup black pepper. 1/4 cup paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 tablespoon cayenne pepper. Wood chunks or chips hickory or oak. Charcoal.
Instructions: Set the temperature of your Char-Broil Offset Smoker to 225F. Remove any surplus fat from one side of the brisket, preserving approximately 1/4 inch of fat. To make the rub, combine the salt, black pepper, paprika, onion powder, garlic powder, and cayenne pepper in a bowl. Make sure the brisket is evenly coated by generously applying the rub on all sides. Place the fat side of the brisket up on the smoker grates. For a smokey flavor, add wood chunks or chips to the charcoal. A constant temperature of 225F should be maintained during the cooking process. Smoke the brisket until the internal temperature reaches 195F, which should take about 1.5 hours per pound. After it's finished, take the brisket out of the smoker and give it 30 minutes to rest before slicing. Take a bite out of the smoked brisket, cut it up, and dig into some Texas barbecue sauce!
