While it is raining pitter patter mum makes one of her chaaya kada favorites, Vettu Cake. Vettu Cake is a Keralan Tea Shop favourite. Nothing but fried dough, mum's aunt would get her a few from the nearby kada in Painkulam. She would call it Thake and they would all have it with tea. Refined wheat flour, eggs, baking soda, a bit of turmeric powder, sugar cardamom & fennel powder & salt goes into the dough which is rested and then given notches in a criss cross pattern. That is how it came to be called Notch Cake or Vettu Cake.
