These tasty and high-protein Paleo muffins make a great breakfast choice. They are an excellent option for people on a Paleo diet because they are dairy- and gluten-free. Tight with cheddar, ham, and cottage cheese, they are flavorful and filling.
Ingredients: 1 cup cottage cheese. 4 large eggs. 1/2 cup diced ham. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon dried oregano. 1/4 teaspoon dried basil. Coconut oil or cooking spray for greasing muffin tin.
Instructions: Preheat your oven to 350F 175C. In a large mixing bowl, whisk together the cottage cheese and eggs until well combined. Stir in the diced ham, shredded cheddar cheese, chopped green onions, salt, black pepper, garlic powder, onion powder, dried oregano, and dried basil. Mix until all ingredients are evenly distributed. Grease a muffin tin with coconut oil or cooking spray to prevent sticking. Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden brown on top.
