Ingredients: 2 slices of whole wheat bread. 2-3 fresh figs, thinly sliced. 1 small sweet potato, thinly sliced and roasted. 1/2 cup of shredded Gouda cheese. 1 tablespoon of honey. 1 tablespoon of butter.
Instructions: Warm up your grill or pan on the stove by setting it on medium heat. Each piece of bread should have one side brushed with butter. Put one slice of bread on the grill or pan with the butter side down. Put half of the Gouda cheese on top of the grilled bread slice. Place the roasted sweet potato slices on top of the cheese. Put the sliced figs on top of the sweet potatoes. Spread the honey out over the figs. Add the rest of the Gouda cheese on top. Put the second slice of bread on top of the cheese, butter side up. It should be cooked for two to three minutes on each side, or until the cheese melts and the bread turns golden brown. Take it off the grill or pan and give it a minute to cool down. Cut the sandwich in half diagonally and serve right away.
