Indulge in the heavenly combination of chocolatey Oreo cupcakes and a creamy, fluffy cheesecake frosting. These cupcakes are a perfect treat for any occasion!
Ingredients: 1 and 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1 cup milk. 1 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 12 Oreo cookies, crushed for batter. 12 Oreo cookies, for decoration. 8 oz cream cheese, softened. 1/4 cup unsalted butter, softened. 2 cups powdered sugar. 1 tsp vanilla extract. 1 cup heavy cream.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with cupcake liners. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture. Mix until just combined. Fold in the crushed Oreo cookies into the cupcake batter. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Let them cool completely. For the cheesecake frosting, beat the softened cream cheese and butter together until smooth. Add the powdered sugar and vanilla extract, and continue to beat until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until you have a smooth and fluffy frosting. Pipe or spread the cheesecake frosting onto the cooled cupcakes. Place a whole Oreo cookie on top of each cupcake for decoration.
