Tonight my housemate came back from wrapping cheese and we had an impromptu cheese tasting because this batch of cheese (which is called Bossa & is a washed rind cheese formulated after Redhawk and is an American Cheese Society winner) was so on point it was amazing. We warmed it in the oven a little, she ate it with vegetables and I ate it with a little raw orange blossom honey on toast and IT WAS SO GOOD. We then took some goat milk caramel from a nearby farm and finished the rest of the cheese with it and it was salty, sweet, and savory and totally delicious. And FREE! One of the best parts of being a cheesemaking intern is all the free cheese (cause lol the stuff we make is not cheap)
