Ingredients: 4 large potatoes, washed and cut into fries. 1 tablespoon olive oil. Salt and pepper to taste. 1 cup chili con carne. 1 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup sour cream.
Instructions: Preheat the oven to 425F 220C. In a bowl, toss the potato fries with olive oil, salt, and pepper until evenly coated. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the fries are golden and crispy, flipping halfway through. Once the fries are cooked, remove from the oven and top with chili con carne and shredded cheddar cheese. Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
