I rewatched the scene of Syd's panic attack after I saw a lot of people interpreting it as being about leaving The Bear, rather than Carmy's treatment of her. And having rewatched it I more or less agree. However, I also think it's a direct parallel to Carmy's panic attack in season 2. Thinking of Syd grounded him and let him calm down. Syd thought of Carmy as her panic peaked. Also, the glimpses of him we see in her mind feel less positive than the glimpses of everyone else. Like, they're not negative, they're not him screaming or angry, but his face is pretty neutral in both whereas we see at least one shot of everyone else smiling (and while it's somewhat rare Carmy does smile so its not a case of her having no memories of him smiling).
I think why her panic peaks when she sees Carmy, yes, it's at the thought of leaving him, but also at knowing that she has to, that how things are between them currently, and how he's running The Bear, is making her unhappy and is unsustainable. I think this is also why, at the beginning of the panic attack we see spilled food and hear the sound of the printer printing a tonne of tickets, the same sound that scored her panic in season 3, before she vomited, and also the sound that is associated with Carmy's freakout in The Review, when she decided she wasn't going to put up with being treated like shit and walked out.
