The dish above was super easy to make! I used flank steak, wild rice, bell peppers, tomatoes and avacados. I re-did this recipe from one that I learned from my fiances mom. I'm starting to learn that base ingredients are necessary in marinating all meat. You don't always have to overcrowd your onions and bellpeppers in globs of butter (which looked kind of like a heart attack waiting to happen) lol. I like the general crunch of the vegetables while cooking, so if you do to then all you need is a 1 tsp of EVOO and 1 tsp of fat free white vinegar 1 pinch of sea salt and sautee the veggies for 5-6 mins (dont let the onions get transparent bc then youve sauteed them too long). Avacados are high in fat, but they have essential fatty acids to help you burn so if you are working out they make for a great side dish (1/2 of an avacado) but if you dont really work out then it wouldnt be that healthy of a side dish for you.
