A little something about our dynamic Head of Faculty, Wayne Aastrom -
He has been a professional Chef for 15 years.
He spent 5 years as Head Chef at Canada’s Royal Winnipeg Ballet.
He grew up around his Grandparents orchard which laid the foundation for his interest
in growing, harvesting, preparing and serving culinary delights.
He solely believes in sourcing locally grown produce, protein and cheese from expert
regional talent.
He relies as much as possible upon making ‘in-house’ products
With his love for creating fine culinary experiences, he looks forward to sharing his
experiences with ardent learners helping them fulfill their desires for a career in this exciting
field.
Culinary Arts Program Overview
The Culinary Arts Diploma Program includes theory classes along with hands-on experience which comes as a rotate through two-week blocks in a commercial-grade kitchen. Exemplary Instructors lead students in small groups and train them about the different techniques and styles of cooking. Through this course, you can gain thorough knowledge and skills of classic cooking fundamentals together with current industry trends as taught by the instructors. Both theory, as well as practical components, are covered at the Culinary Arts Diploma Program at Commonwealth College. The program includes subjects such as Cookery Techniques, creative Culinary Arts, Menu Planning and
Development, Supervision and Team Management, Dietary and Nutritional Studies, Stock Control, Workplace Health and Safety and more.
