Red lentil curry: 2 cups red lentils 1lg onion (I use red) 14oz tomato puree Olive oil 2 tablespoons of curry paste (I use thai green) 1 tablespoon curry powder 1 teaspoon ground cumin 1 teaspoon sugar 1 teaspoon turmeric 2 teaspoons salt 1 teaspoon chili powder 1 teaspoon ginger (I use dry) 1 teaspoon garlic (fresh or powder) 1. Cover 2 cups of lentils in water, bring to boil, cover & simmer for probably about 20 min. Adding in water as it cooks 2. Mix all spices in bowl 3. Chop onions & carmelize in olive oil in pan then add spice mix when onions are done for about a minute 4. Stir onion mixture and tomato puree into lentils once the lentils are done cooking Serve with naan or pita *makes enough to freeze some if you like freezing dinners like me #VeganLife #Vegetarian #Vegan #ChefJuju
