Delectable almond-flavored bite-sized cookies with a burst of sweetness from chopped dried cherries. These cookies are ideal for snacking or serving as a sweet treat at any time.
Ingredients: 1 cup almond flour. 1/2 cup dried cherries, chopped. 1/2 cup unsalted butter, softened. 1/3 cup granulated sugar. 1/2 teaspoon almond extract. 1 egg. 1/4 teaspoon salt. 1/4 teaspoon baking soda. 1 1/4 cups all-purpose flour.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. Add the egg and almond extract and beat until everything is well mixed. Add the all-purpose flour, salt, and baking soda to a different bowl and mix them together using a whisk. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Add the chopped dried cherries and mix them into the dough until they are spread out evenly. With your hands, roll the dough into small balls that are easy to eat. Place the balls on the baking sheet that has been prepared. Press down gently on each ball to make it a little flatter. Take the cookies out of the oven and heat it up. Bake them for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. The Almond Cherry Cookies Bites are ready to eat once they have cooled down.
