Ingredients: 1 cups all-purpose flour. cup unsweetened cocoa powder. 1 teaspoon baking soda. teaspoon salt. cup granulated sugar. cup packed light brown sugar. 2 large eggs. 1 teaspoon vanilla extract. cup semi-sweet chocolate chips. cup dried cherries. cup chopped almonds.
Instructions: Preheat the oven to 325F 165C and line a baking sheet with parchment paper. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat granulated sugar, brown sugar, eggs, and vanilla extract until well combined. Gradually add the dry ingredient mixture to the wet mixture and mix until just combined. Stir in chocolate chips, dried cherries, and chopped almonds. Divide the dough in half and shape each half into a 2-inch-wide log on the prepared baking sheet. Bake for about 25 minutes, or until the logs are firm to the touch. Remove from the oven and let the logs cool for 15 minutes. Reduce the oven temperature to 300F 150C. Using a serrated knife, cut the logs into -inch-thick slices. Place the slices back on the baking sheet and bake for an additional 20 minutes, turning them over halfway through to crisp both sides. Transfer the biscotti to a wire rack to cool completely before serving.
