Ingredients: 1 and 1/2 cups all-purpose flour. 1 and 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1/2 cup whole milk. 1/2 teaspoon vanilla extract. 1/2 cup maraschino cherries, chopped. 1/2 cup mini chocolate chips. For the Fluffy Bourbon Vanilla Frosting:. 1 cup unsalted butter, softened. 4 cups powdered sugar. 2 tablespoons bourbon. 1 teaspoon vanilla extract. 2-3 tablespoons heavy cream. Red food coloring optional. Cherries and chocolate chips for garnish optional.
Instructions: Preheat your oven to 350F 175C. Line a cupcake pan with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. Set aside. In another bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry mixture. Mix until just combined. Fold in the chopped maraschino cherries and mini chocolate chips. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. While the cupcakes are cooling, prepare the Fluffy Bourbon Vanilla Frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, bourbon, and vanilla extract. Beat until well combined. If the frosting is too thick, add heavy cream, one tablespoon at a time, until you reach your desired consistency. If desired, add a few drops of red food coloring to achieve a pink frosting color. Once the cupcakes are completely cool, pipe or spread the frosting on top of each cupcake.
