Chhole Kulche from a street vendor at CP, Delhi. . Whenever I am in the capital city, going to a street vendor for this magical dish is something of a pilgrimage for me. This time around, Cannaught Place with huge crowd of people rushing to reach to their destination was the scene for the Chhole Kulche expedition. Now when I’m in delhi, I never miss the golden opportunity of exploring new options for food, so I set out for some 'Tedha Patila' hunt. . Saw this guy outside the station, happily feeding 10 odd people at his thela. We immediately ordered a patta and Kulchas for us. First bite and you could taste Delhi. The perfectly cooked Chhole and it’s subtle flavours paired with fried potato slices and teekhi masala mirch were dancing in my mouth. The soft and tender Kulchas paired up very well with them. It's the secrets passed on by the generations, that make this Chhole Kulche culture tick. I only pray this lasts forever, even if sophistication takes over in the future. . . . .
