Tender chicken and crisp asparagus are combined in a flavorful sauce in this quick and simple recipe for stir-fried chicken and asparagus. In no time at all, a delicious and nutritious meal is ready!
Ingredients: 1 lb chicken breast, thinly sliced. 1 lb asparagus, trimmed and cut into 2-inch pieces. 2 cloves garlic, minced. 1 thumb-sized piece of ginger, minced. 2 tablespoons vegetable oil. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 tablespoon cornstarch. 1 teaspoon sugar. Salt and pepper to taste.
Instructions: In a small bowl, mix together soy sauce, oyster sauce, cornstarch, sugar, and a pinch of salt and pepper. Set aside. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the sliced chicken and stir-fry until it's no longer pink. Remove the chicken from the wok and set it aside. Add the remaining 1 tablespoon of vegetable oil to the wok. Add minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Add the asparagus to the wok and stir-fry for 3-4 minutes until it becomes tender-crisp. Return the cooked chicken to the wok and pour the sauce mixture over the chicken and asparagus.
