In a slow cooker, soft chicken, hearty vegetables, and the bright flavor of pesto simmer together to make this comforting and tasty soup.
Ingredients: 1 lb boneless, skinless chicken breasts. 4 cups chicken broth. 2 cups diced potatoes. 1 cup diced carrots. 1 cup diced celery. 1/2 cup diced onion. 1/2 cup pesto sauce. 1/2 cup heavy cream. Salt and pepper to taste.
Instructions: In the slow cooker's bottom, put chicken breasts. On top of the chicken, put diced potatoes, carrots, celery, and onion. Add chicken broth to the chicken and vegetables. Turn the heat to low and cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is done and the vegetables are soft. Take the chicken breasts out of the slow cooker and use two forks to shred them. Put the chicken shreds back into the slow cooker. Add the heavy cream and pesto sauce and mix well. Add pepper and salt to taste. Put the lid on top and cook on low for another 30 minutes. Enjoy while hot!
