Ingredients: 1 lb chicken thighs, boneless and skinless. 3 potatoes, diced. 2 carrots, sliced. 1 onion, chopped. 2 cloves garlic, minced. 1 cup chicken broth. 1 teaspoon thyme. 1 teaspoon rosemary. Salt and pepper to taste.
Instructions: Place chicken thighs, potatoes, carrots, onion, and garlic in the slow cooker. Pour chicken broth over the ingredients. Sprinkle thyme, rosemary, salt, and pepper over the mixture. Stir to combine ingredients. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and vegetables are tender. Once cooked, shred the chicken with two forks and stir it back into the stew. Serve hot and enjoy!
