Ingredients: 6 large potatoes, peeled and diced. 1 onion, chopped. 3 cloves garlic, minced. 6 cups chicken broth. 1 cup water. 1 cup whole milk. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/2 cup bacon bits. Salt and pepper to taste. Chives for garnish.
Instructions: In the slow cooker, put diced potatoes, chopped onion, minced garlic, chicken broth, and water. Leave it on low for 7 to 8 hours, or until the potatoes are soft. Blend the soup until it's smooth with an immersion blender. Add the cheddar cheese shreds, sour cream, and bacon bits, and mix them in. Add pepper and salt to taste.
