This One-Pot Lemon Chicken Couscous is a quick and flavorful dinner option that combines tender chicken, zesty lemon, and fluffy couscous in a single pot. It's a perfect meal for busy weeknights!
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 cup couscous. 2 cups chicken broth. 1 lemon, zested and juiced. 2 cloves garlic, minced. 1 red bell pepper, diced. 1/2 cup frozen peas. 1/4 cup chopped fresh parsley. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside. In the same skillet, add minced garlic and diced red bell pepper. Saut for 2-3 minutes until peppers are slightly softened. Stir in couscous and cook for an additional 1-2 minutes, stirring frequently. Pour in chicken broth, lemon zest, and lemon juice. Bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes or until couscous has absorbed the liquid. Stir in frozen peas and cooked chicken. Cook for an additional 2-3 minutes until peas are heated through. Season with salt and pepper to taste. Garnish with chopped fresh parsley and serve hot.
