Instead of regular burgers, try these zucchini quinoa burgers with couscous. They taste great and are good for you. Because they are full of grated zucchini, quinoa, and tasty spices, they fill you up. The couscous is a tasty base for the burgers, making the dish well-balanced.
Ingredients: 1 cup couscous. 1 1/4 cups water. 2 medium zucchinis, grated. 1 cup cooked quinoa. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 2 cloves garlic, minced. 1 egg, beaten. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 teaspoon dried oregano. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper optional. 2 tablespoons olive oil, for cooking.
Instructions: Bring 1 1/4 cups of water to a boil in a medium-sized saucepan. Add the couscous, mix it in, cover, and take it off the heat. After 5 minutes, use a fork to fluff it up. Grate the zucchini and add it to a large bowl along with the cooked quinoa, breadcrumbs, Parmesan cheese, minced garlic, beaten egg, salt, black pepper, oregano, paprika, and cayenne pepper if using. To make a burger mix, mix it well. Cut the mixture into six equal parts and form each one into a burger patty. Set a pan on medium heat and add the olive oil. These burgers are done when they are golden brown and cooked all the way through. Cook them for about 4 to 5 minutes on each side.
