This Cheesy Chicken Fajita Quesadilla has soft chicken, onions and bell peppers sauted in butter, and melted cheddar cheese all wrapped up in a crispy tortilla. It's the perfect mix of tastes that will make you crave Mexican food!
Ingredients: 2 boneless, skinless chicken breasts, sliced thinly. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 onion, sliced. 2 cups shredded cheddar cheese. 4 large flour tortillas. 2 tablespoons olive oil. 1 tablespoon fajita seasoning. Salt and pepper to taste. Sour cream and salsa for serving.
Instructions: Warm up the olive oil in a big pan over medium-high heat. It will take about 34 minutes on each side for the chicken slices to start to brown after you add them. Take the chicken out of the pan and set it aside. Put sliced onions and bell peppers in the same pan. Saut them for about 5 minutes, or until they get soft. Put the cooked chicken back in the pan and season it with salt, pepper, and fajita seasoning. Mix things together well. Set one tortilla on medium heat in a clean pan. Lay out half of the tortilla and cover it with 1/2 cup of shredded cheddar cheese. On top of the cheese, put some of the chicken and fajita vegetable mix. To make a half-moon shape, fold the other half of the tortilla over. Use a spatula to gently press down on the tortilla. Cook for about two to three minutes on each side, until it is golden brown and the cheese melts. Do the same thing with the rest of the tortillas and filling. Comes with sour cream and salsa.
