Ingredients: 1 cup cooked rice. 1 boneless, skinless chicken breast, diced. 2 tablespoons peanut butter. 2 tablespoons soy sauce. 1 tablespoon sriracha sauce. 1 tablespoon honey. 1 clove garlic, minced. 1/4 cup chopped peanuts. 1/4 cup sliced green onions. 1 tablespoon sesame seeds. 1 tablespoon vegetable oil.
Instructions: To make the sauce, combine peanut butter, honey, sriracha sauce, soy sauce, and minced garlic in a small bowl. In a skillet set over medium-high heat, warm the vegetable oil. Cook the chopped chicken breast until it becomes browned and fully cooked. When the chicken is cooked, add the prepared sauce to the skillet. Coat the chicken evenly with a stir and cook for a further two to three minutes. After the rice is cooked, transfer it to a bowl for assembly. Add sesame seeds, sliced green onions, chopped peanuts, and hot peanut chicken on top. Enjoy while hot!
