Tonight's meal. Chicken rollatini w/ mozzarella cheese, spaghetti & ghetto sauce. - Chicken: Flattened thin chicken breast. Seasoned w/ salt/pepper/italian herbs. Put a mozzarella string cheese stick in & carefully rolled. Put in flour/egg wash/panko. Fried lightly on each side. Removed & put on small pan. Place pepper jack cheese on top. Stuck in oven. - Spaghetti: Boiled some up. - Sauce: Jar of marinara. Added diced onions/pickled brussel's sprouts/sliced black olives/salt/pepper/italian herbs/roasted garlic/red pepper flakes. Heated up. Added a bit of sour cream & stirred in. - Cheese sticks: Cut 2 mozzarella string cheese sticks in half & put in flour/egg wash/panko. Fried up real quick as a snack while the chicken was cooking. - Result: Mamma Mia! Some good stuff. Cheesy chicken goodness. Sauce could have been better but I have some leftover & can fix it for tomorrow. Chicken was dope AF though.
