Ingredients: 1 lb boneless, skinless chicken thighs, diced. 1 onion, chopped. 3 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 cup orzo pasta. 4 cups chicken broth. 1 lemon, juiced and zested. 2 tablespoons olive oil. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the diced chicken thighs and cook until they turn brown. Chop up the onion and garlic and cut up the carrots and celery. Cook the vegetables until they get soft. Add the chicken broth, lemon juice, and zest. Add salt and pepper, along with the dried thyme. Once it starts to boil, turn down the heat and let it cook slowly for 15 minutes. Add the orzo pasta and stir it in. Simmer for another 10 to 12 minutes, until the pasta is done and the chicken is soft. Check the seasoning and make changes if needed. Serve hot with fresh parsley on top.
