Indulge in this rich and creamy vegan chocolate mousse made with aquafaba, the magical liquid from canned chickpeas. This dessert is gluten-free and will leave you glowing with bliss after every bite.
Ingredients: 1 cup aquafaba liquid from canned chickpeas. 1/2 cup vegan chocolate chips. 1/4 cup maple syrup. 1 teaspoon vanilla extract. Pinch of salt. Fresh berries for garnish optional.
Instructions: In a heatproof bowl, melt the vegan chocolate chips using a double boiler or in the microwave in 30-second increments until smooth. In a separate bowl, beat the aquafaba using a hand mixer or stand mixer until stiff peaks form, about 5-7 minutes. Once the chocolate is melted, let it cool slightly. Gently fold the melted chocolate, maple syrup, vanilla extract, and salt into the whipped aquafaba until well combined. Divide the mousse into serving glasses or bowls. Chill in the refrigerator for at least 2 hours to set. Garnish with fresh berries before serving, if desired.
