This dip is thick and creamy, and it tastes great with tortilla chips. It has onions, jalapeos, tomatoes, and melted cheese.
Ingredients: 2 tbsp vegetable oil. 1 small onion, finely diced. 2 cloves garlic, minced. 2 jalapeo peppers, seeded and finely diced. 2 tomatoes, diced. 1/2 cup milk. 1 cup shredded cheddar cheese. 1/2 cup shredded Monterey Jack cheese. 2 tbsp all-purpose flour. Salt to taste. Tortilla chips, for serving.
Instructions: In a skillet, heat vegetable oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and diced jalapeos, cook for an additional 2 minutes. Sprinkle flour over the onion mixture and stir well to combine. Gradually pour in milk, stirring constantly until the mixture thickens, about 2-3 minutes. Add diced tomatoes and stir to combine. Reduce heat to low and gradually add shredded cheddar and Monterey Jack cheeses, stirring until melted and smooth. Season with salt to taste. Transfer the dip to a serving bowl and serve warm with tortilla chips.
