This One Pot Chili Cheese Pasta is a comforting and flavorful dish that combines the richness of chili with the creaminess of melted cheese. It's a convenient one-pot meal that's perfect for busy weeknights, and the whole family will love it!
Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes. 1 can 15 oz tomato sauce. 2 cups beef broth. 2 cups uncooked pasta such as elbow or penne. 2 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. 1/4 tsp cayenne pepper optional, for extra heat. Salt and pepper, to taste. 2 cups shredded cheddar cheese. 2 tbsp chopped fresh parsley, for garnish optional.
Instructions: In a large pot or Dutch oven, brown the ground beef over medium heat until cooked through. Add the diced onion and minced garlic to the pot, and cook until softened, about 3-4 minutes. Stir in the diced tomatoes, tomato sauce, beef broth, uncooked pasta, chili powder, cumin, paprika, cayenne pepper if using, salt, and pepper. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 15-20 minutes, or until the pasta is tender, stirring occasionally to prevent sticking. Once the pasta is cooked, remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy. Garnish with chopped fresh parsley, if desired, and serve hot.
