A hearty and tasty chili made with lean ground beef and a mix of spices that is great for a cold night. This recipe is easy to make in the Instant Pot and is good for Weight Watchers because it doesn't have any beans.
Ingredients: 1 lb lean ground beef. 1 onion, diced. 1 red bell pepper, diced. 2 cloves garlic, minced. 1 14.5 oz can diced tomatoes. 1 8 oz can tomato sauce. 1 cup beef broth. 2 tbsp chili powder. 1 tsp ground cumin. 1 tsp paprika. 1/2 tsp dried oregano. 1/4 tsp cayenne pepper. Salt and pepper to taste. Optional toppings: shredded cheese, Greek yogurt, diced avocado, chopped cilantro.
Instructions: Put the Instant Pot in "saut" mode. Break up the ground beef with a spoon as it cooks until it turns brown. Put in the garlic, onion, and bell pepper. After two to three minutes, the vegetables should be soft. Chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper should all be added. This order is important. Mix things together well. Put the lid back on the Instant Pot and set it to high pressure for 10 minutes. After the cooking time is up, let the pressure drop naturally for 10 minutes. Then, carefully let any pressure that is still there escape quickly. Take off the lid and stir the chili around. Check the seasoning and make changes if needed. Serve hot with extras if you want.
